Green Pesto
1 clove of garlic, chopped Freshly ground black pepper to taste
3 good handfuls fresh basil, leaves picked and chopped
1-handful pine nuts, very lightly toasted in a pan
1 good handful Parmesan cheese, freshly grated
K.Larsen extra virgin olive oil
1 small squeeze lemon juice
Pulse in a food processor the garlic, salt, pepper and the basil leaves. Add the pine nuts to the mixture and pulse again. Turn out into a bowl and add half the freshly grated Parmesan. Stir gently and add K.Larsen’s olive oil – you need just enough to bind the sauce and get a nice consistency.
Season to taste, and add most of the remaining cheese. Pour in some more K.Larsen olive oil, small squeeze of lemon juice and taste again. Keep adding a bit more cheese or oil until you are happy with the taste and consistency.
