Pumpkin Soup

Ingredients:

- 500 g pumpkin

- 250 g carrots

- 250 g potatoes

- 1 onion

- 2 cloves of garlic

- 500 ml of water

- 50 ml K. Larsen Extra virgin olive oil

- Salt and pepper

 

Instructions:

1. Peel the pumpkin, carrots, potatoes, onions and garlic and cut into small cubes.

2. Heat the olive oil in a pan and sauté all the vegetables for approx. 5 minutes.

3. Add water and simmer under the lid for approx. 20 min.

4. Blend the soup and season with salt and pepper.
